Cold Sesame Noodles



3/4 lb linguine or 1 lb fresh Chinese noodles
1 tbsp sesame oil
1/4 cup snow peas, trimmed
3 whole Scallions, trimmed, slivered and cut into 3-inch lengths
1 cup fat-free chicken broth
1/4 cup tahini
1 tbsp Chinese rice wine
1-1/2 tsp chili paste with garlic or more to taste
1 teaspoon low-sodium soy sauce
1 whole carrot, trimmed, peeled and cut into thin strips for garnish


Prepare Salad: Cook noodles in large pot of boiling salted water until just done. Drain and rinse thoroughly to cool. Place in large mixing bowl and toss with sesame oil.

Blanch snow peas in boiling water to cover for just 10 seconds. Plunge into cold water to stop cooking. Drain. Combine snow peas and scallions with noodles.

Prepare Dressing: In blender, combine all dressing ingredients. Pour over salad and toss well. (Salad can be served immediately or held for several hours, covered, in refrigerator. For longer storage, refrigerate pasta and dressing in separate airtight containers for up to 1 day. Bring to room temperature before serving.)

To serve, garnish with carrot.
